Ingredients :
3 whole chicken legs
1tbsp ginger garlic paste
1cup yogurt
4tsp red chilli powder
1tsp black pepper powder
2tsp of special garam masala
- 1 dried red chilli
- few coriander seeds
- few peppercorns
- 1 mace
- 1/2 nutmeg
- 1 black cardamom
- 4-5 cloves
- 1tsp cumin seeds
Roast these spices, grind it and add 2 tsp of this masala
1tsp of red food colour
- 1tsp ghee
- 1tbsp oil
Method :
•Marinate the chicken well for 5 hours except ghee and oil.
•After it is marinated , shallow fry thr chicken adding 1tbsp oil in a pan.
•After its done, roast the chicken over the flame for 1 minute.
•To give the smoky flavour, take 2 peices of charcoal, place it in a small bowl, keep it between the chicken and add a clove to it. •Add 1tsp of ghee and cover the lid and do not let the smoke escape for 5minutes. This method is called dungar and gives it the rustic and smoky flavour with the pungency of clove.
•Squeeze a lemon juice and let your canines tear this beauty..
