𝘏𝘺𝘥𝘳𝘢𝘣𝘢𝘥𝘪 𝘋𝘰𝘶𝘣𝘭𝘦 𝘬𝘢 𝘮𝘦𝘦𝘵𝘩𝘢
I had never ending perplexity between Shahi tukda and double ka meetha till I got to exprience double ka meetha in the old city of Hydrabad in 2014. It is very popular in Hydrabad and is named after double roti which is Urdu translation of English bread. When cooked in tandoor this bread would rise twice the size, because of which it came to be known as Double ki roti.
I wonder how the exact same ingredients can make so much difference when cooked with a different method. After doing a lot of research on double ka meetha I came to an end with this recipe which serves the best purpose for a perfect evening dessert.
You will need:
• 1lbs bread( Remove the edges and cut a single bread slice into 4 squares)
• 1litre milk
• 2tsp cardamom powder
• 1cup ghee fried chopped almonds and raisins
• 100g khoya
• 500g sugar
•1/2 cup water
• Oil /Dalda/Ghee for frying bread ( Try avoiding oil because frying in dalda or ghee brings out the best taste)
• Orange yellow food colour
Method:
• Fry the bread till it becomes golden brown. Let the pointer of shade be more towards brown. Keep it on a tissue to absorb excess oil. Now the bread is ready
• In a pan heat sugar water and add 1/2tsp of food colour. Cook the syrup till single string consistency.
• In another pan heat milk, add cardamom powder,1/2cup nuts and khoya. Keep stirring with a wodden spoon till reduced to half or when it becomes a little thicker. Keep scraping the sides as well. (Do not cook it till creamy consistency).
• Now assembling the above things. First, assemble one layer of bread( half the quantity) in any bowl of your choice. I prefer using a square one for keeping the bread peices evenly. Pour 2tbsp of milk on top of bread, then pour 2tbsp of sugar syrup. Sprinkle fried nuts ( other half cup). Again layer the bread and repeat the process.
Pro tip : You can bake this for 15mins at 180°c
Or
Let it soak for 1 hour ideally. You can soak for how much ever hours you want.
While you let it soak, save 2 tbsp of milk and reduce it to rabi lile consistency. Pour on top of it while serving and garnish with nuts again.
